sponge cake (genoise)


Ingredients:

For the cake
- 4 eggs (room temperature)
- 120 g all-purpose flour
- 120 g white sugar
- 1 teaspoon vanilla essence
- 1 pinch baking powder

For decoration
- some cherries
- whipping cream
- canned fruits
- 2 tablespoons sugar
- 3 tablespoons water

Procedure:
1) Sift flour with baking powder.
2) Whisk the eggs, sugar and vanilla essence together for 15-20 mins till fluffy.
3) Fold in the flour gently into the egg mixture.
4) Line baking tin with baking paper or brush with butter.
5) Pour in the mixture into the tin.
6) Bake in preheated oven at 180 C for about 20 mins. Let cool.
Decoration
7) Cut cake into 2 parts horizontally.
8) Cut the canned fruits as desired and keep the syrup.
9) Mix the canned fruits' syrup with sugar and water.
10) Whip the cream.
11) Then, brush the 1st part of cake with the syrup mixture and then brush with whipping cream.
12) Place the 2nd part of the cake and proceed with the syrup and whipping cream.
13) Decorate with cherries and fruits.
